Beignets



Y'all, these are SO good and really easy. I was surprised at how easy they were to make. The longest part is waiting for them to rise in the fridge for an hour before I could fry them.

My husband and a few members of his family love board games and, when possible, we like to host at our home. It gives me an excuse to try new recipes on them and spoil them with yummy food. I enjoy having people in our home since we go days with just seeing each other. :)

Without further ado, here's the newest recipe in our collection. I will be making these again. I was able to roll them out and fry them up in under 30 minutes. Try them and enjoy!

Beignets- from Cook’s Country
Yield: 24 beignets, all different sizes

Ingredients:
1 Tbsp yeast
1 Tbsp sugar
1 cup warm water

3 cups all-purpose flour
2 Tbsp sugar
¾ tsp salt

2 Tbsp vegetable oil
2 eggs

Instructions:

Mix first 3 ingredients in a small bowl. Let stand until bubbly, about 5 minutes.
Whisk next three ingredients in a large bowl.
Mix last 2 ingredients together, add to flour mixture. Add yeast mixture when ready.
Mix all together with a rubber spatula and cover with plastic wrap. (The dough will be very sticky)
Refrigerate 1 hour to rise.

In a dutch oven, add 2 quarts (8 cups) of vegetable oil. Heat to 350 degrees F.

Working with half of the dough roll out into 9x12 rectangle. (Use lots of flour to roll out dough because it’s very sticky)
Cut into 12 pieces.
Place cut pieces on well-floured cookie sheet.
Fry 4-6 beignets at a time. Let oil come back to 350 degrees F before adding each batch of beignets to fry. Fry 2-3 minutes or until brown, flip and fry until brown.
Place fried beignets on cookie sheet topped with cooling rack to let excess oil drain.
Coat well with powdered sugar.
Repeat with other half of dough.
Serve warm and add extra powdered sugar if desired.

*Note: If you don’t have a candy thermometer to test your oil temperature, start heating the oil at medium heat. Lower or raise heat as needed. I found that on my stove a little lower than medium heat was the desired temperature, otherwise the beignets browned too quickly and I felt like they looked a little too brown. And tasted it, too.

Garlic Pesto Chicken with Tomato Cream Penne




Garlic Pesto Chicken with Tomato Cream Penne-modified from Southern Girl Cooking

Ingredients:
1 bottle of Lawry's herb and garlic marinade
4 large spoonfuls of pesto
4-5 boneless, skinless chicken breasts; cut into one-inch strips
-Place all ingredients in a gallon size bag and marinate up to 24 hours.

Sauce:
16 ounces pasta (I used whole wheat penne)
2 Tbsp olive oil
6 cloves garlic, pressed or minced
4 spoonfuls of pesto
1 cup of chicken broth
16 ounces tomato sauce
2 cups half and half


Cooking Instructions:
1. Boil water and start cooking noodles, drain when ready.
2. Pour entire batch of chicken, marinade too, into skillet and cook chicken fully. The marinade will evaporate and cook down to about half. When complete, remove from pan.
3. In now empty pan, heat olive oil, cook garlic until fragrant, about 30 seconds. Add pesto, then chicken broth and simmer until half is cooked down. Add tomato sauce then half and half. Simmer for 5 minutes. Add 1 Tbsp flour if it needs to thicken (I thought it needed it). Stir in drained noodles and then the chicken and it's sauce until combined. Serve.

Verdict:
We loved this, even our Naomi loved it. She couldn't get enough in her mouth. It's creamy and has tons of flavor. It made so much I had enough to put a few servings in the freezer. This would easily serve 6 people when you serve it with a salad and vegetables. And the one jar of pesto I bought will make another batch of this. Enjoy!

Duchess Potatoes



Y'all these are amazing little wonders. They are fun and a different side item than just a baked potato. And surprisingly, so so simple to make. I was really surprised about how simple they were. Try them. You won't be disappointed!

Duchess Potatoes- from Cook's Country (aka America's Test Kitchen)

Ingredients:
3 pounds russet potatoes
1 cup heavy cream
6 Tbsp unsalted butter, cut into 1/4 inch pieces and softened
1 large egg and 1 large egg yolk, lightly beaten
1 1/4 tsp salt
1/2 tsp pepper
1/2 tsp baking powder
pinch of nutmeg (yes, really!)
vegetable oil spray

Cooking Instructions:
1. Prick potatoes all over with a fork. Place in microwave and for 18-25 minutes, turning potatoes after 10 minutes. (Mine took right at 20 minutes, total)
2. Preheat oven to 425 degrees F.
3. Remove from microwave, cut in half. When cool enough to handle, scoop out flesh and place in large bowl. Mash until no lumps remain. Add cream, 3 Tbsp butter, egg and yolk, salt, pepper, baking powder and nutmeg. Continue to mash until potatoes are smooth. Let cool to room temperature, 5-10 minutes. Gently fold in remaining 3 Tbsp softened butter.
4. Transfer potato mixture to piping bag fitted with 1/2 inch star tip. *(I used a gallon size ziploc bag and didn't use a star tip). Pipe eight 4-inch wide mounds of potato onto rimmed baking sheet. Spray lightly with vegetable oil spray and bake until golden brown, 15 to 20 minutes. Serve.

These can also be made 24 hours in advance. Pipe, cover with plastic wrap, refrigerate up to 24 hours and bake as directed.

For the freezer:
Once piped onto baking sheet, cover with plastic wrap (loosely) and freeze for 2 hours or until solid. Transfer to your method of storage. When ready to bake place them onto a baking sheet, spray with vegetable spray and bake according to instructions. They can go straight from freezer to oven and need no extra time.

*Tips:
-I didn't have a big enough star tip so I put my potatoes in a gallon size ziploc bag and snipped off a corner. I then piped it on just like that and while it wasn't as pretty, it worked just the same.
-When piping, start from the outside and slowly work your way to the middle, overlapping a little each time around to create the mound and point in the middle. They make look terrible the first few times but you'll get the hang of it.

Easy Homemade Lasagna

Recently, I told you about a lasagna I made for our neighbor who broke her leg. I decided I'd share it with you. I usually triple this recipe as it freezes great and I don't get anymore dishes dirty than I would if I were just making one lasagna. This is wonderful to pull out when I need a quick dinner and is simply delicious!

Easy Homemade Lasagna

Ingredients: (this is a single recipe)

1 pound ground beef (we like ground turkey)
1 egg, beaten
2 1/2 cups shredded mozzarella cheese, divided
1 (15 oz) container of ricotta cheese (I use cottage cheese instead)
1/2 cup grated parmesan cheese, divided
1/4 cup fresh parsley chopped OR 2 Tbsp dried parsley
4-8 ounces Velvetta cheese, cubed into 1-inch pieces
1 (26 oz) jar spaghetti sauce
1 cup water
12 lasagna noodles, uncooked (we like whole wheat noodles)


Cooking Instructions:

1. Preheat oven to 350 degrees F. Brown meat in large skillet. In a medium size bowl beat egg, 1 1/4 cups mozzarella cheese, the ricotta cheese, 1/4 cup of the parmesan cheese, velvetta cheese and parsley until well blended. Set aside.
2. Drain meat and return to skillet. Stir in spaghetti sauce, add the 1 cup of water to the empty sauce jar, shake and dump in skillet. Stir until well blended.
3. Assembly: Spread 1 cup of meat mixture in the bottom of a 9x13 in. pan, top with 3 lasagna noodles, a third of the ricotta cheese mixture and 1 cup sauce. Repeat layers twice. Then, top with 3 remaining noodles and the remaining meat sauce. Sprinkle with remaining 1 1/4 cups mozzarella cheese, 1/4 cup parmesan cheese. Cover with greased foil.
4. Bake 45 minutes, remove foil and bake an additional 15 minutes or until heated through. Let stand 15 minute before cutting.

Makes 12 servings. Serve with homemade french bread and a tossed salad.

Freezer Friendly:
If you want to freeze this, do not bake. Cover and freeze. Thaw completely before baking. Leftovers can be frozen and they're delicious!

Note:
When tripling this recipe, 2 boxes of lasagna noodles is enough.

Chicken Alfredo Pizza

I've definitely been on a pizza kick the past 3 days. We had pizza Friday and Saturday night for dinner and Sunday for lunch, at least they were all different. Here's my latest creation in pizza making. Enjoy!




Chicken Alfredo Pizza

Ingredients:


Alfredo sauce: This sauce makes enough for 2 medium-size pizzas or 1 large pizza (I do 2)
1/4 cup butter
about 1 cup heavy cream
2/3 cup freshly grated parmesan cheese
1/4-1/2 tsp oregano
1/4 tsp garlic powder
salt and pepper, to taste

Pizza:
1 pizza crust
1/2- 1 cup cooked, shredded chicken (depending on the size of your pizza)
4-6 slices cooked bacon, chopped
1 cup mozzarella cheese
optional items: 10-12 spinach leaves, chopped green onions, extra cheese

Cooking Instructions:
For sauce: Melt butter in small/medium saucepan or skillet. Add cream and bring to a boil. Simmer for 5 minutes, stirring continuously. Add parmesan cheese and spices. Take off heat and set aside.

For pizza: Preheat oven to 450 degrees F. Roll out pizza crust, top with alfredo sauce, then chicken, bacon, optional items and then cheese. Bake for 10-15 minutes, check at 10 minutes.

Freezer Friendly: 
Follow all directions up to baking. Place on a cookie sheet, flash freeze in the freezer for about an hour. Take out, wrap well with plastic wrap, label and put back in the freezer until ready to use. To bake: preheat oven, leave pizza in oven until ready to bake and bake as normal; see above baking instructions. Yes, it's that easy!

Verdict:
This was a hit with Daniel! He loves alfredo sauce so when I mentioned this he jumped on the chance to try this out. I planned on dividing the sauce into 3 pizza's and portioned it that way; it looked like so much on one pizza. When it baked up the sauce soaked in too much so we decided halving the sauce between 2 pizza's would be best.

Cinnamon Buns



We LOVE breakfast in our home and these cinnamon buns (or rolls) are among our favorites. Nyla wants one every morning. That's saying something! :)
I double and triple this recipe, easily, for freezer breakfasts. Yes, they even freeze great even with the icing on them!

Cinnamon Buns--from America's Test Kitchen
Printer-Friendly Recipe
Yield: 8-12 buns


Ingredients:
Cinnamon-Sugar Filling
3/4 cup packed dark brown sugar (light works fine)
1/4 cup sugar
2 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp table salt
1 Tbsp butter, melted

Biscuit Dough
2 1/2 cups all-purpose flour (I use white whole wheat and it works great)
2 Tbsp sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 cups buttermilk
6 Tbsp butter, melted and cooled, divided

Icing
2 Tbsp cream cheese, softened
2 Tbsp buttermilk
1 cup powdered sugar

Cooking Instructions:
1. Preheat oven to 425 degrees Fahrenheit. Spray a 9-inch cake pan with non-stick spray; set aside.
2. Combine all filling ingredients in a small bowl; set aside.
3. Dough: Step 1-mix dry ingredients in medium size bowl. Step 2- add 2 Tbsp melted butter to buttermilk, add to dry ingredients and stir with wooden spoon until ingredients are combined. Place on counter and knead until smooth and no longer shaggy, about a minute.
4. Roll out or pul dough by hand into a 12x9 rectangle . Brush with 2 Tbsp melted butter. Sprinkle filling mixture evenly, leaving a 1/2 inch border of plain dough. Press filling firmly into dough, roll up into a log, on one of the long sides. Using a serrated knife cut off 1/2 inch of each side and discard. Cut log into 8-12 pieces, depending on how big you want you cinnamon buns. Start by placing one cinnamon bun in the middle and place the rest around the center bun.
5. Brush with remaining 2 Tbsp melted butter and bake for 20-25 minutes. I start at 20 minutes and that's usually enough.
6. After you remove buns from the oven mix the icing together, the cream cheese may be a little lumpy but keep whisking it until combined (if it stays lumpy, that's okay). Dump it on top of the cinnamon buns immediately and serve warm. Enjoy!

Freezer Instructions:
Follow all directions above, yes even ice them and cool completely. Cover buns and freeze.
OR
After icing buns and cooling completely, divide all the buns from one another, wrap individually in plastic wrap and freeze.
When ready to eat, thaw completely and put in a warm oven (if warming up a whole batch of buns) and  heat until warm. If heating up a individually wrapped bun, place in microwave for 20-30 seconds until warm. Eat and enjoy!

Homemade BBQ Sauce

Who doesn't love homemade? Especially if it's easy to throw together in one container. And it's something you use frequently. This is that recipe... homemade bbq sauce.
When we were visiting my Grandparents down in Georgia last Fall, so they could meet their first great-grandchild my Grandmother (a fabulous cook/baker!), she made some chicken and had this bbq sauce. It's one she's had in her foray of recipes for years and is used frequently. I took down the recipe and have made it ever since. I won't go back to a store bought bottle again!

BBQ Sauce-from Grandmama

Yields: 32 oz

Ingredients:
3 cups (24 oz) ketchup
1/2 brown sugar, packed
1/2 cup molasses*
1/4 cup mustard
2 Tbsp. vinegar
2 Tbsp. liquid smoke
2 Tbsp Worcestershire sauce
Red pepper flakes, to taste (I probably used a pinch)

Use a 32 oz ketchup bottle with 24 oz ketchup left. Add all ingredients. Shake well to combine. Refrigerate.

*I never had molasses in my kitchen until I talked to my Grandmother about it. She said she's always had it. And well, since she's such a good cook I decided why no?. And it is a nice staple to have on hand!

Garlic Bread Seasoning


Homemade Garlic Bread Seasoning-from The Double Dipped Life
Printer-Friendly Recipe

1/2 cup powdered parmesan cheese
2 tsp Kosher salt
2 Tbsp garlic powder
2 tsp oregano
2 tsp basil
2 tsp marjoram
2 tsp parsley

Combine all ingredients in a jar (use one with a shaker top if you'll use it to shake on top of things).
Goes great with pizza sauces, on top of pizza, in sauces, on top of breadsticks OR
combine 1 1/2 Tbsp garlic seasoning with a stick of softened butter. Spread on loaf of french bread (cut in 1/2 lengthwise), wrap in foil and bake and 375 degrees F until butter is melted. Or open face up under broiler for a few minutes until brown and crispy. I put it in the broiler more often because I like my bread crunchy.

I put my garlic seasoning in an empty jam jar and doubled the recipe. I have a feeling I'll be using it quite a bit so I went ahead and doubled it.

I forgot to take a picture of the butter/seasoning mixture spread on my french bread. But it was more than enough to spread over the 2 pieces of french bread. And it was wonderful!

Easy Pizza Sauce

Easy Pizza Sauce:

*1 clove garlic, mashed and minced
*1 tsp salt
*1 can (6 ounces) tomato paste
*1 can (8 ounces) tomato sauce
*1/2 tsp sugar
*1/8 tsp pepper
*1/2 tsp oregano
*1 Tbsp olive oil
*dash red pepper, optional (I don't put this in b/c Hubby doesn't like spicy too much)

Directions:
Combine all ingredients. makes about 1 1/2 cups, enough for 2-3 pizzas

Great on Pizza Bread! Or a store bought pizza dough or your own homemade. My homemade pizza dough coming soon!
