Menu Plan Monday: May 19-25
Happy Sunday to y'all!
We spent the morning at our sweet church worshipping our God. The music team was rocking the house today. There was even a banjo played today. It was pretty awesome!
Daniel and I just finished our leftover fajita lunches and now we're enjoying the quiet of the house while the girls nap. This pregnant mama might not be too far behind. :) I've got to take advantage while I can with the whole sleep thing.
Before I nap, I figure I'd share my menu with you for the week. I've been much better about planning our meals lately. I guess that comes with more energy in the second trimester. I'm still staying away from sourdough recipes and Jason's deli. I have no idea why but those are the two things that are completely unappealing during this pregnancy. We all have our dislikes, right?!
My menu planning has gotten better since I'm planning monthly, for the most part. I print off a basic, monthly template for the month and plan at least every two weeks. Sometimes I'll move on and fill in spaces here and there for the rest of the month. I like the view of this better than anything else I've tried. I feel like at a glance it's just better for me. And I can hang this on our fridge and we can all see what's for dinner. Whatever works is what I'm all for during this time in my life.
Monday- pretzel honey mustard chicken {new}, brown rice and vegetables
Tuesday- lasagna leftovers (I have a Bible study tonight)
Wednesday- club sandwiches, chips and fruit or yogurt
Thursday- layered enchilada bake leftovers
Friday- pizza
Saturday- dinner with Gigi?? TBD
Sunday- dinner with my parents?? TBD
That's our menu for the week. If we don't have dinner with our families, we'll have something easy, like leftovers or sandwiches.

Menu Plan: January 6-12
The first full week of January is upon us and it just seems crazy to write that out!
Time really does fly by the older you get. Yikes!
One of my 2014 goals is to blog 2 times a week. That seems simple enough to most but actually being intentional about it is hard for me. It's not that I don't love blogging but really and truly making the time to do it isn't on the top of my list. Sorry if that seems harsh, but it's the truth and I'm trying to be real. My girls are only this little for a short time and I don't want to blog more than 2 times a week. I want to be with them. :)
So, since one of my goals is to blog 2 times a week and I want to make it even easier on myself I'm going to blog my menu plan every week. Not only because I love menu planning and it's the easiest blog to post, but also so my man can check out what we're having and he doesn't have to ask me everyday. :) Plus, I have quite a few people tell me they like to see what we're eating for dinners and what's new in my kitchen. So here goes... first menu plan of 2014!

l: KDO-noodles, cheese, pepperoni's, fruit
d: sweet and sour chicken, brown rice, steamed broccoli
Tuesday-
b: pancakes and bacon
l: grilled cheese or mini pizza

b: special day-I make a fun breakfast since I have more time (i.e. donuts, waffles, danish)

Menu Plan: Dec 15-21
It's winding down to Christmas... 10 days to go! Frankly, I'm ready for it to be over. We don't do a lot around here but with all the commercials and stuff, it's getting more nauseating with each year. Yes, I like presents and spending time with family and talking about Jesus but all the in-between things are just tiring! Anyone else?!?!
Moving on... our week is shaping up to be a busy one. Tomorrow night we travel down to Olive Branch to pick up our Azure Standard order. It's my last order with that group as I've found one in Arlington and only 15 minutes from our house. It'll be much better! I'll have to tell you how much I love Azure in another post! Wednesday is Daniel's office Christmas party. He started a new job last week so we'll go and meet everyone on Wednesday. I'm nervous but excited. I've already been consulting my sister on what to wear. This casual, stay-at-home momma doesn't have a clue! Thankful for her and her advice. And next Sunday is our church candlelight service and the preschool is putting on a short live nativity program. They did it last year and it was so sweet. I always love see what shenanigans the kids pull in those situations. It'll be fun as always!

As you can see I'm posting breakfast, lunch and dinner. I make the same things for breakfast and lunches each week but change up our dinner. I got so bogged down in planning all 3 different meals each week that I decided to keep breakfast and lunch the same. It offers us variety and I don't feel like I'm eating the same things all the time. I do switch foods up, as needed, if we're running low on certain things. This method has been working for us for a few months now and I'm happy with it. Do you plan breakfast and lunch?

Menu Plan Monday
Hello out there!
This blog has been quiet lately, minus a few videos are our precious girls. :)
We've had a lot going on in our family lately. Please keep my immediate family in your prayers, we're going through a tough time. God has us in the palm of His hand and He'll see us out of our bad time. It's still a hard time, though.
I've continued to menu plan the last couple of weeks, using what I have in our freezer and cooking a few old recipes. I've been changing my recipes around to suit my new "whole" foods journey. Some are good and some are not. Such is life and cooking. :)
Here's what we're having this week:
Monday- Three Cheese Garlic Chicken (freezer meal)
I put together and froze quite a few dishes when I had a big freezer cooking week awhile back. To stretch food in our family I put dishes that called for a 9x13 inch pan into two 8 inch pans. This has helped stretch our food and saved us money.
Tuesday- Pancakes and Bacon
Wednesday- Chicken Quesadillas, chips and salsa (freezer meal)
Thursday- Pulled Chicken Sandwiches (freezer meal)
Friday- Pizza (I make 4-6 pizzas at a time and freeze them, pull them out and cook them like frozen pizzas. It works out great for Friday nights and busy weekends)
Saturday- Club Sandwiches
Sunday- Trunk or Treat at our church, we'll eat there

Menu Plan Monday-Sept 16
Happy Sunday! I hope you've had a good week and ate yummy foods.
We stuck to our menu pretty well last week. I've been enjoying cooking and baking lately (I go through phases) so we've been eating and freezing delicious foods. This week I'm trying some new dinners, mostly casseroles. The recipes call for each dish go into 9 x 13 inch pans but I'll be dividing them into 2 8 x 8 inch pans (or 9 x 9 pans), eating one for dinner this week and freezing the other for another meal. I'm hoping to stretch our food budget by making a few more casseroles for our freezer. And freezer meals are great to have when you're in a time crunch.
Monday- chicken alfredo pasta with steamed broccoli
Tuesday- pulled chicken sandwiches on homemade buns (delicious and ready in 40 min) and fruit
Wednesday- layered enchilada bake, made with homemade tortillas and homemade salsa
Thursday- baked three cheese chicken pasta and vegetables
Friday- homemade pizza
Saturday- chicken vegetable quesadillas with chips and salsa
Sunday- leftovers

Menu Plan Monday-August 26
Y'all, it's been forever since I've done a Menu Plan Monday post! I've still been planning our meals they just haven't made it onto the blog. Raising two girls keeps me busier than I ever imagined. :)
I've been reading Nourishing Traditions and it's changing my thinking of what we put into our bodies. It's A LOT to take in and will take me reading it a few times to really grasp all the information. It's more than a cookbook and much like a workbook full of good information. There are over 700 recipes as well as tons of information about eating real food. Real food is food that grows in fields and on trees, comes from animals and food we can recognize. This book has brought my focus back to making more from scratch using real butter, real fruits and vegetables, whole grains, real eggs, real meat, etc. I know I'll still eat junk and processed foods but if 95% of the time we can eat real food, that would be great!
Another book I bought back in the Spring, that I really love, is by Laura of Heavenly Homemakers, Oh, For Real: Real Food, Real Family, Real Easy. She uses much of Nourishing Traditions suggestions on real food but it's MUCH easier to understand. She's hilarious, love shortcuts in the kitchen but not at the expense of good food, has 4 boys that she home schools and has beautiful freezers stocked full of goodies! I've been a follower of her blog for quite a few years now and she makes me laugh out loud at her posts a few times a week. She's real and knows we're all strapped for time in the kitchen. Read her blog, you won't be disappointed. And buy her book, too. It's awesome!
Anyways, enough of that. I think you'll see more of our real food adventures in the future. On to the menu plan for the week. I have way too much food in our freezers and I'm trying to clean out so we're working on what my mama calls "old" food. :)

I'm still following my breakfast menu for the girls and me, for the most part. As for lunches we eat leftovers, sandwiches, noodles, cheese, fruit. It depends on what's in the fridge and since the girls are older and a little more vocal, I let them choose a little more.

Happy February, y'all! February is a big month in our family this year. My baby sister (she's 27) is getting married this month! We are so excited and so looking forward to all the festivities. One of my grandmothers is coming in this Friday and the rest of the family and our friends will get here the following Thursday and Friday. So not only are we in the process of remodeling our new home but we have a wedding and all the final details to get done. It's going to be a crazy couple of weeks. I'm so looking forward to all the fun times the next couple of weeks bring! Thankfully, menu planning saves me the headache of "what's for dinner?" I'll be sticking to my planning and hopefully cooking the next 14 days. Here's the plan for this week!
Monday- leftover honey baked ham, 30 minute rolls and vegetables
Tuesday- leftover cheesy chicken spaghetti and salad or vegetables
Wednesday- fluffy diner-style omelet {new} (from Cook's Country) and fruit
Thursday- jambalaya and vegetables

Menu Plan Monday- January 21
We've had a busy week. It's been full of doctor visits, a sick mommy, getting work done in the house and a death in the family. I'm tired! We all are. I'm thankful for the family we have here and the love we've received from our church family. It's been an emotional week.
Last week, despite all the craziness, I stuck to our menu! We got a little behind but I made a Wednesday's dinner for lunch on Friday. So glad I did, too. The duchess potatoes were amazing!!! Try them, you won't be disappointed.
I've got another week of good eats planned. I've really enjoyed getting back into the kitchen. Just another 6 weeks or so and I'll be cooking in my new kitchen! :) I can't wait to create more memories in our new home.
January 21-27
Monday- garlic pesto chicken over pasta {new recipe} and vegetables
Tuesday- spaghetti, garlic bread and salad
Wednesday- chicken tortilla soup

Menu Plan Monday-January 14
January 14-20
Monday- 30 minute rolls, honey butter, bacon and fruit
Tuesday- crispy southwest chicken wraps and salad
Wednesday- bbq chicken breasts (with my homemade bbq sauce), duchess potatoes (from my Cook's Country cookbook) and vegetables
Thursday- "the ham" (yes, we call it that), brown rice and vegetables
Friday- buckwheat pancakes, bacon and fruit (the pancakes are a mix Daniel's grandfather gave us for Christmas. He swears they're the best, we'll give it a try)
Saturday- Callie's soft chicken taco's (I made a bunch a couple months ago, so these are from the freezer)
Sunday- leftovers
As always, we'll be following this breakfast schedule and this lunch schedule. I've been following these breakfast and lunch menu's for a couple months now and I'm still happy with it. It's made life so much easier for us when it comes to meal time. I feel like we have plenty of variety and we can easily adjust if we have leftovers, which we typically do. It's all about simplifying where I can.

We may be having a couple from church over this weekend so I will end up moving some things around. I'm thinking I'll make Wednesday's meal for when they come over (either Friday or Saturday) and move that meal to Wednesday. It's all about being flexible when it comes to menu planning!

Menu Plan-November 12

Hi y'all! I haven't shared my menu in a few weeks so I figured I would. I've still been planning I just haven't told you about it. :) We've been sticking to the plan of plan one week and eat it for two weeks in a row. But I think I'm tired of that. Each week goes by so quick and I feel like we're eating the same things all the time. So I think I'll stick to the idea of plan once and eat twice here and there but plan different things in between so I don't get burned out on spaghetti and jambalaya because I definitely am!
Monday- smothered "aussie" chicken, brown rice, vegetable
Tuesday- lasagna and homemade breadsticks
Wednesday- Thanksgiving at church (I'm bringing a corn casserole {new} and a chocolate chip pie)
Thursday- penne alla vodka with italian sausage
Friday- bbq chicken pizza
Saturday- Callie's chicken soft taco's {new}
Sunday- pepperoni pizza

31 Days: When Menu Planning
I love to menu plan. I think it goes along quite well with the simple and minimal lifestyle we lead. When I menu plan I don't buy what I don't need. I will never have a pantry full of food that goes bad before I get to use it. And menu planning helps stay within our grocery budget, most months anyways. :)
I (right now) menu plan every two weeks. And then I grocery shop every two weeks. I do go in between for milk, eggs, yogurt and fresh produce. I always run out of those quickly. I used to plan weekly then I went to every two weeks and then I planned monthly. At this point in time planning every two weeks is good for us. It's hard to do major grocery shopping more than twice a month. I also found I'm likely to stick to my list if I do major shopping twice a month. I may go back to the other ways as our family evolves, but I'll cross that bridge when I get there.
I'm not going to say that menu planning is always a breeze. It definitely isn't! There are some weeks when I struggle to menu plan. I don't know why, I just do. I want to try new things but right now finding the time to spend the time on certain recipes is the problem. With two little ones at my heels, standing over the stove for more than 15 minutes is tough stuff. Even weekends are hard to spend extra time on meals. I want to spend that extra time with Daniel and not so much in the kitchen.
Over my four plus years of menu planning I've figured out what works best for us and how I can plan without going over our budget. Here are my tips for sticking to our budget and making meal planning work for me.
Plan the same dinners for two weeks in a row.
I just recently started doing this and it's made my life so much easier! I also love freezer cooking and this goes along with it. By doubling our dinners the first week I have the second week's meals already made and can easily reheat.
Check our deep freezer list.
I keep a running inventory of what's in our deep freezer hanging on our refrigerator. I try and use our leftovers within a month, if possible.
Check our refrigerator and freezer.
I used to have an inventory sheet for our fridge freezer as well but I had foods coming and going so often it was hard to keep a good inventory. And it's just as easy to look in the freezer as it is to look on a sheet of paper.
Check our pantry for baking and staple items.
I bake just about all our breads from scratch (sandwich bread, breadsticks, rolls, etc) so I always need flour. And sugar. Checking the pantry is essential for sticking to our grocery budget. Yes, I've had 3 bottles of ketchup (I make our own barbecue sauce and ketchup is the base) in the pantry at one time. And when I've bought a bottle and didn't need it I think of the $2 I wasted on something I didn't need. It makes me mad. I'm trying to get better about checking our pantry.
Check breakfast and lunch menu ideas.
Planning our breakfasts and lunches is new to me. I read about it on a blog and loved the idea. I struggle with varying our breakfasts and lunches around here; because of that I end up serving the same foods over and over again. Planning these has helped make meals easier and less loud when the girls are hungry. :) I have a permanent (for now) menu plan for breakfast and lunch posted on my fridge. I can easily check this list with what I have available in the fridge and freezer and buy what I'm low on. I've noticed this has helped our grocery budget as well.
Do we want to try a new recipe?
I love recipes so trying new ones are always on my list. This is where our 2 week menu varies. If I want to try a new recipe I actually look for two new recipes. I do this in case the first recipe I make isn't good and not something I'd want to repeat the following week. Oh yes, it's happened a lot in this house. I wrote about one here. I will stick with a theme on those days though. If I want to make a new lasagna one week I'll make a pasta dish for the next week. I do this so I can use some ingredients in both dishes. For instance, I had to buy an 8 ounces can of tomato sauce for a recipe but I only need 4 ounces of it in one of my recipes. I'll either double that recipe or find something else that needs 4 ounces of tomato sauce. No, nothing goes to waste in our home. :)
Check our calendar for events outside our home.
We don't have too much going on outside our home these days. And frankly, we like it like that. When we do have somewhere to be it's usually dinner with our parents or dinner at our church. Sometimes things pop up after I menu plan but I just move things around or roll them over to another week. When we already have events on the calendar I work them into my menu plan. I always bring something with us to events so having it on the calendar means I just add my ingredients to our grocery list. Bada bing, bada boom! If you have events outside your home, once a week planning may work better for you. If you have events that pop up you will be better off planning once a week so you can roll your planned meals to the following week. This ensures nothing goes to waste. When we were first married planning once a week worked for us because of this. We could be more spur of the moment because we had no kids to plan around.
When it comes to menu planning do what works for you. Play around with weekly or monthly menu planning. I really go back and forth depending on what stage of life we're in. I'll be posting our lunch menu next week. Check back for that!

31 Days: Menu Plan Monday
Each week (well most weeks) I join hundreds of women in menu planning and linking up our menu plans. I started menu planning not long after Daniel and I got married 4 years ago. Almost everyday around 10 a.m. I would get a text that said, "What's for dinner?" I'm serious. At first I laughed. Then I got a little irritated. I had no idea what was for dinner! It was 10:00 a.m. I hadn't even eaten lunch by then. And why did it become my responsibility to think and cook up what's for dinner?
After a couple weeks of this I made a decision to start planning our dinners. I started planning one week at a time. A few months later I felt like I was planning all the time because the weeks went by so quickly. I then moved to planning every two weeks then I went monthly. I've gone back and forth to planning twice a month and once a month. At this stage of our busy lives I now pdlan once a month. I also plan two weeks of meals and repeat each. We'll have the same foods on the same nights for two weeks in a row. We've been doing that for a month now and it suits us. We still get a varied menu but I'm not struggling to figure out what's for dinner.
There are some months when it is HARD to plan but I know we save money and I save my sanity come 4:00 p.m. when it's time to get things going. If you visit this blog weekly you'll find my menu plan for the week and the link to find other women who link up their families menu plans.

Menu Plan-September 24

Hey y'all! It's been awhile since I've posted my menu plan on our blog. I've continued on with menu planning and sticking to it but I also started something new with our menu.
I was inspired by Rachel's simplifying series and loved her thoughts on meal planning. I loved the idea about planning one week of meals and repeating that same menu the following week. What a concept! And I wish I would've thought about it. I also struggle with coming up with awesome meal plans each week. I mean I love planning but some months the task is daunting and I have a hard time coming up with meals. Even though we eat a lot of the same meals I try and be fun and plan new things but I get bogged down in that. Easier and familiar are better!
It's been a couple weeks since I've started planning our dinners like this and I love it! It's easier to plan our meals and surprisingly we don't mind eating the same things two weeks in a row. And I've found that our grocery budget is staying in check and somewhat lower. And that's something I didn't expect to come along with this new menu planning adventure.

Tuesday- was going to be penne alla vodka but since I forgot I used all the heavy cream I have no idea what I'll be making. oops!
Wednesday- pulled chicken sandwiches and veggie chips
Thursday- jambalaya
Friday- bbq chicken pizza
Saturday- leftovers or sandwiches
Sunday-leftovers or sandwiches

Hey y'all! It's been awhile since I've posted my menu plan on our blog. I've continued on with menu planning and sticking to it but I also started something new with our menu.
I was inspired by Rachel's simplifying series and loved her thoughts on meal planning. I loved the idea about planning one week of meals and repeating that same menu the following week. What a concept! And I wish I would've thought about it. I also struggle with coming up with awesome meal plans each week. I mean I love planning but some months the task is daunting and I have a hard time coming up with meals. Even though we eat a lot of the same meals I try and be fun and plan new things but I get bogged down in that. Easier and familiar are better!
It's been a couple weeks since I've started planning our dinners like this and I love it! It's easier to plan our meals and surprisingly we don't mind eating the same things two weeks in a row. And I've found that our grocery budget is staying in check and somewhat lower. And that's something I didn't expect to come along with this new menu planning adventure.
Well, enough about that. Let's see what we're eating for the second week in a row.

Breakfast Planning
With two little ones in the house meals get crazy quickly if I'm unprepared, especially breakfast time. I've been planning our breakfasts for the past few months but it's been too much trouble, to think of something different for everyday of the month. Ugh! I have a hard enough time thinking of dinners for us. My friend Rachel over at Intentionally Simple has started streamlining her menu's and I love the idea she has for breakfast. She also has two little ones and knows it gets wild, quick and being prepared is in her favor.
Rachel suggests planning a breakfast for everyday and repeating it each week. Hello, why didn't I think of this? I sat down last Sunday night and thought of all the foods I usually have on hand for breakfasts that are either made or can be prepared quickly. I came up with 10 things! I planned for all 7 days of the week plus had a few extras that can easily be replaced if one of my usuals isn't available. It's been so easy to take 5 minutes the night before and pull out what I need from the freezer for breakfast the next morning. Since I've taken the time to plan this menu breakfast isn't as hectic. It's all in the fridge, ready to be warmed up. For some reason breakfast time sneaks up on me. I'm busy getting the girls dressed and playing and before I know they're having a meltdown about being hungry. Our mornings have been easier ever since I created this menu.
Here's my weekly breakfast plan (it will stay this way until I decide otherwise):
Monday- eggs, bacon and toast
(I cook all the bacon on Sunday night and put it in labeled containers for which meal the bacon goes to, as some goes to dinners during the week)
Tuesday- blueberry pancakes (from the freezer) with maple syrup
Wednesday- cereal or oatmeal (I've just started making baked oatmeal, yum!)
Thursday- muffins and eggs (I always have muffins in the freezer. We like apple, blueberry and whatever else I feel like making)
Friday- cinnamon roll (from the freeze)
Saturday- banana bread (from the freezer) or cinnamon toast (Daddy's is the best!)
Sunday- peanut butter toast and bacon
Quick substitutes if my usual isn't available:
french toast
omelets
breakfast sandwiches (I usually have a whole wheat bun in the freezer, cheese, bacon and eggs in the fridge)
On Monday's, Thursday's and Sunday's I fix a heartier breakfast for us. Nyla goes to Kid's Day Out at my parents church on Monday's and Thursday's and I like for her to eat a good breakfast since they eat lunch a little later than we do around here. And Sunday's are usually long mornings for us. We get there early since Daniel is the audio/visual guy and teaches Sunday school on occasion and we're there chatting for awhile after service has ended. We need a breakfast that is going to stick with us until we get home.
This menu is posted on our fridge so each night when I'm preparing for the morning I can look to see what I need to get out. Most of it heats up quick and is ready to go in under a minute. And sometimes I need that to keep my sanity!

Menu Plan Monday-July 30

Happy end of July. I can't believe we'll be heading into August this week. This year has flown! I guess that's because we've been so busy having two babies getting big.
I haven't blogged our menu in awhile. I have been menu planning and sticking to it, I just haven't felt like blogging about it. :)
I'm continuing my freezer cooking and putting together a few dishes a week. Naomi still takes a 30 minute nap in the morning so Nyla and I throw together a few dishes a week during this time. I am loving not having to cook at night but instead have our dinners ready to go and just warm them up. I haven't made a dinner at night from start to finish in I don't know how long. And I've definitely enjoyed it. Here's what we'll be enjoying this week!
Monday- layered enchilada bake, with homemade flour tortillas
Tuesday- pulled chicken sandwiches, on whole wheat buns (I make 12, not 24)
Wednesday- grilled chicken roller (I cook in the oven) with potato and vegetable
Thursday- taco's
Friday- pepperoni pizza on whole wheat rolls
Saturday- chicken alfredo
Sunday- leftovers

Menu Plan-July 1
Can you believe it's already July? July is a big month in our home, our oldest girl turns 2 this month and we can't believe it! I may cry all day just like I did last year when she turned one. I know she's doing what she's supposed to be doing, growing up, but it's gone by SO fast and it's just hard to believe she'll be two. I feel like I just had her! :) Here's our menu for the week.
Sunday- chicken alfredo pizza {new recipe}
Monday- buttermilk herb chicken breasts {new recipe} with brown rice and vegetables
Tuesday- cheesy chicken bundles {new recipes}
Wednesday- lunch with Daniel's mom and dinner at my parents
Thursday- chicken quesadillas (from the freezer)
Friday- breakfast
Saturday- pulled chicken sandwiches (one of Daniel's favorites)
The new recipes are from my new cookbook, Don't Panic- Dinner's in the Freezer and I'm very excited about trying them. I hope they're good!

Menu Plan-June 24
We've had quite the busy week this week and our girls are way off the nightly routine. They've been somewhat of a disaster come five and I know it's because we haven't been home. Tonight we're back in it. We had some great friends come by and see us and give us some relief. I love when we have visitors!
I stuck to our menu this week. We had dinner at my parents house Friday evening and dinner out with friends Saturday evening (they generously paid) and we had good times at both places. As for our June challenge, we blew it Sunday afternoon (Father's Day) and got Mexican. Naomi woke up with a fever so we didn't go to church but got out and ran 2 errands to get us ready for the week. When I asked Daniel if there was anything else he wanted to go do he replied with, "Mexican." Now, I love Mexican and whenever someone says that word I jump on it and say, "Let's go!" So we did. But that's been our only going out adventure and it was under $25, so that's not terrible. I'll blame him for it all though. :)
As for this week we will be staying close to home and getting back in our nightly routine because the adults in the house are worn out too! I'll be making some favorites and adding a couple new recipes too.
Monday- poppyseed chicken (from the freezer and 5 ingredients), rice and vegetable
Tuesday- chicken quesadillas (from the freezer)
Wednesday- chicken stuffed with feta and spinach, over spaghetti and sauce {new}
Thursday- cinnamon rolls and eggs
Friday- zuppa toscana soup (I know soup is weird for a summertime meal but we eat hot foods every other night of the week!)
Saturday- chicken stuffed with bacon and swiss, potato and vegetable {new}
I got a great new book this week, Don't Panic- Dinner's in the Freezer. I've been looking at this cookbook almost everyday and getting so excited about what I'm seeing. I think freezer cooking is pretty easy and it's all trial and error to see what of your favorite meals do well in the freezer. This book has some recipes I've never seen and am anxious to try. I also love that I have all the ingredients in my fridge or pantry and just need the meats they call for. I'm excited that I don't have to buy a bunch of ingredients that I don't already have on hand or aren't easy to get and use with other recipes. I think it'll be a great addition to my cookbooks and my freezer cooking adventures.

Happy Father's Day to all you sweet daddies this year!
I'm thankful for my sweet daddy who has been a loving, encouraging and positive role model all my life and continues to be in my adult years.
Secondly, I'm thankful for my husband and the sweet daddy he is to our girls. He loves them unconditionally and is so much fun with them, he's a great sport!
Thirdly, I'm thankful for Daniel's daddy who is in heaven now, but I know (from everything I've heard) that he was a very loving person as well and that Daniel is a lot like him. I'm thankful for who he was to his wife and sons for the years they had him here.
Our June challenge of no eating out is going great. We haven't eaten out once on our dime. We went to Olive Garden a couple weeks ago and used a gift card and had a few fast food meals but our families bought so it doesn't count!
I went grocery shopping on Friday and blew the budget wide open! It wasn't pretty but we have to eat and since we're not eating out we have a little more money to go toward the budget. It's hard when our toddler doesn't eat a lot of what we're eating and when I'm making baby food. Making baby food is a lot cheaper than buying pre-packaged food but it still costs to make. I can't wait until they're eating what we're eating!!

Monday- chicken casserole with a kick {new}-5 ingredients!
Tuesday- spasagna (leftovers from the freezer)
Wednesday- parmesan chicken tenders, potato fries, veggies

Friday- toast, bacon and eggs
Saturday- we have a wedding at 3 and food will be served so we'll have an early dinner there

Menu Plan-June 10
I realized last night that I never posted our menu for the week. We had a fairly busy but relaxing weekend and then Vacation Bible School started Sunday evening at our church so posting my menu plan totally slipped my mind! So I'll just post it now. :)
Sunday- lunch: on your own (Seeing "Mamma Mia" at the Orpheum Theater with my mom and sister)
dinner: on your own (VBS starts tonight and goes on for the next four nights)
Monday- bbq chicken pizza (freezer meal)
Tuesday- not sure, maybe just some breakfasts from the freezer
Wednesday- taco's with homemade corn tortilla's (taco meat-freezer meal)
Thursday- smothered aussie chicken, brown rice and veggies (chicken-freezer meal)
Friday- pizza (freezer meal)
Saturday- dinner at my parents for Mother's Day and Father's Day (My mom was sick on Mother's Day so we're celebrating both!)- steak, twice baked potatoes, salad and probably a homemade ice cream dessert, made by me.
